my neighbor Erin Phillips of Phillipsfarmbatavia.com brought this soup over during Frank’s recent recovery. We loved it and, as Erin said, this makes a great gift in a jar. I wanted to share.
PASTA FAGIOLI SOUP IN A JAR
1 Quart Mason Jar (wide mouth is best but regular jar will work)
Add the following in order listed - all ingredients are dried
Ingredients
1 cup small pasta shells in bottom
3/4 cup red beans
3/4 cup great northern beans
Combine these dried spices in small bag and place on top:
3 tablespoons parsley
1 teaspoon oregano
1 teaspoon basil
1 teaspoon minced onion
1/4 teaspoon garlic powder
1/4 teaspoon onion salt (opt)
1/4 teaspoon red pepper flakes
1 bay leaf
Additional ingredients:
1 can diced tomatoes, salt and pepper to taste, Parmesan cheese if you like
To prepare:
Separate seasoning packet, beans and pasta. Rinse beans and add them with 6 cups water to pot. Boil 2 minutes. Remove from heat, cover and let stand for 1 hour. Drain and return beans to pot.
Add seasoning packet, plus 8 cups water (or combo of broth and water or all broth), bring to boil, reduce heat, cover and simmer for 1 hour or until beans are tender.
Add tomatoes, salt and pepper if you like, cover and simmer 30 minutes, strring occasionally.
Stir in pasta, cover and simmer 10 minutes or until pasta is tender. Remove bay leaf and top with cheese. Makes 14 servings.
